    About my essay:

    A lot of non-foodies would see this question as how they like their steak prepared.  What a sad state of affairs!

  The food I prepare is created somewhat pre-prep in my head and then it develos during preparation.  I'm not a cook, I am an artist, working with a palette of the most fresh and intersting ingredients I can find!

Many people wish that I would recreate dishes that they've had at restaurants...unfortunatley, even places like Macaroni Grill or other such nonsense chain places.

As a Personal Chef, I create on a daily basis.  I do start with a basic "recipe", but then tweak ingredients to the flavors of my customer's palates.  From spicy to bland and from creamy to brothy, I have to do it all!  Many times I prepare dishes that aren't appealing to me, but hey, it's a job!  Luckily, at the end of the day with a glass of wine in hand...I put on my fun food thinking cap and produce luxurious meals for my hubby and I using what I have on hand.  Today it's heirloom tomatoes...tomorrow...I'm still guessing about!  No boxes, prepared frozen or other such nonesuch.   Therein lies the secret to successful cooking.  Always fresh...ALWAYS from the heart!
